We add 2 eggs to another bowl and mix them evenly with chopsticks. Slowly pour into the flour, continue to stir evenly with chopsticks, then knead the flour into a soft dough, and then wake up in a bowl for 30 minutes.
Step 2: chubby fried noodles ~
Put the awakened dough on the chopping board, make the dough into 0.2cm-long flour cakes, then cut the dough into individual noodles with a knife, sprinkle a layer of flour on the cut noodles, and shake the noodles completely by hand to prevent adhesion.
Add enough cooking oil to the pan, heat it to 50-60% heat, add the noodles to the oil pan and fry them, turning them constantly while frying, and take them out as soon as they float and just change color, about 15 seconds.
The fried noodles should be put in the filter screen to filter oil and left aside. The fried noodles should be crisp but not soft and fluffy. This is the second step of making maltose Shaqima.
The third step: the transformation journey of noodles ~
Add maltose 100g, fine sugar 100g, and clear water 100g into the pot, and bring to a boil with low heat until bubbles appear in the pot. Prepare a flat-bottomed container, add the prepared noodles and syrup, stir quickly and evenly, flatten the surface with a spoon and put it aside to dry. When the temperature cools down, cut it into small squares with a knife, and our Shaqima will be finished!
Shaqima is delicious and easy to make. It can be easily made by making noodles. It tastes sweet and soft, and melts in the mouth. Both adults and children like it very much. Friends who like it can collect it and try it at home. You don't have to go out to buy Shaqima in the future! Need to pay attention to the details are:
1, when frying noodles, pay attention to the heat and time. When frying noodles, they will expand rapidly, so don't add too much at a time, and fry them a few times, which will not affect the softness of noodles.
2. Although maltose is a sugar, it is not sweet at all. Adding maltose to the syrup can make the syrup taste softer and increase the viscosity, which is more conducive to the formation of Shaqima. When you make Shaqima, you can also add sesame seeds and raisins, which is more sweet and sour.
