Step 1: Preparation
1. Fish head treatment: Wash the fish head, remove scales, gills, guts, cut into 2-3 pieces and spare.
2. Tofu treatment: cut tofu into small pieces and set aside.
3. Shrimp processing: shell the shrimp, remove the shrimp line, wash and spare.
4. green onion, ginger and garlic processing: cut green onion, ginger and garlic into julienne or minced spare.
5. Cilantro: Cut the cilantro into chopped scallions and set aside.
Step 2: Cooking Soup
1. Heat a pan with cold oil and sauté the onion, ginger and garlic.
2. Add water, put the fish head, add cooking wine, simmer for about 30 minutes.
3. Fish out the fish head, cut the fish meat into small pieces and set aside.
Step 3: Cooking
1. Pour the cooked soup into another pot, add the tofu and shrimp, and bring to a boil.

Tips:
1. Fish head should be selected fresh, good quality fish head, so as to make out of the fish head tofu is more fresh and delicious.
2. Tofu should be more tender, so that the taste is better.
