Practice 1: tremella, medlar, dried red dates, rock sugar. Soak the tremella in clear water in advance, not too much at a time. Tremella can be cooked a lot at a time, and it is best to eat it while eating. Put tremella fuciformis, a small amount of Lycium barbarum (not too much, Lycium barbarum will get angry), dried dates and a small amount of rock sugar into a pot, add cold water and cook for 40 minutes or an hour on low heat.
Method 2: 1 tremella, 10 red dates, 20 Chinese wolfberry, and appropriate amount of rock sugar. Soak tremella in hair, wash, remove roots, tear into small pieces, and wash red dates and medlar for later use. Add enough water to the pot, add tremella, and after the fire is boiled, turn to low heat for 1 hour until cooked, so that the juice is thick. Add red dates and cook for 20 minutes. When the pot is ready, add Lycium barbarum and rock sugar until the sugar is completely melted.
Practice 3: soak the tremella in water first, then wash it with clear water for two or three times to control the moisture. Remove the yellow root of tremella, and tear tremella into small pieces by hand. Lotus seeds, red dates and medlar are soaked in water for a short time, usually ten minutes. I usually soak them before cooking, and then I start cleaning tremella and tearing pieces. Tremella has been processed, and lotus seeds, red dates and medlar are almost the same. Control the water after soaking.
Tear the red dates with your hands to expose the pulp. This is done to make the sweetness of red dates easy to come out. Add cold water to the pot, and put the tremella, lotus seeds, "meat-exposed" red dates and medlar together. When the water boils, turn the heat down and start to cook slowly. Be careful not to open the lid too wide, or it will dry easily. You can smell the red dates soon, but don't worry, it will take at least an hour and a half to cook. When it is almost ripe, add rock sugar. After adding the crystal sugar, stir. After a few minutes, the delicious soup of tremella, red dates and medlar can be cooked.
Reminder: the volume of dried tremella and soaked hair is very different. If you don't particularly like eating tremella, don't be greedy when soaking.
