Ingredients: 200 grams of wheat flour; 150 grams of water; 2 grams of yeast; 600 grams of beef; 500 grams of potatoes; 100 grams of green beans; 300 grams of carrots.
Accessories: 20 ml of cooking oil; 20 g of oyster sauce; 50 g of soy sauce; 10 g of dark soy sauce; 1 star anise; 10 g of black pepper; 1 small piece of cinnamon; 5 g of starch; 20 g of ginger.
1. Cut the beef into pieces in advance, add black pepper, starch and some soy sauce and oyster sauce and marinate for 15 minutes.
2. Add water and yeast to the multi-function kitchen machine, then put the wheat flour in and knead it into a dough.
3. Cover the kneaded dough with plastic wrap for fermentation.
4. Pour cooking oil into the cast iron pot and sauté the ginger until fragrant, then put the marinated beef into the pot and stir-fry until it changes color.
5. Add 1000ML boiling water, then put the remaining soy sauce, oyster sauce, dark soy sauce, star anise and cinnamon into the pot and simmer for 20 minutes.
6. After 20 minutes, add carrots and potatoes respectively and continue to simmer for 20 minutes.
7. Then make "small twists". Take out the fermented dough and knead it into a long shape.
8. Cut the cut dough into two halves with a knife in the middle.
9. Twist the two pieces of rounded dough like twists and cover them with plastic wrap to rest for 10 minutes.
10. Continue to add the green beans and simmer with the lid on for 10 minutes.
11. Spread the rested "little twists" one by one on top of the beef, cover the pot and cook over medium heat for 15 minutes (do not open the pot lid in the middle), put the whole pot directly on the table and start eating .
