Ingredients: 200 grams of cauliflower
Accessories: 150 grams of eggs, 50 grams of wheat flour
Seasoning: 50 grams of starch (peas), 3 grams of salt, 2 grams of MSG 1 gram of pepper, 60 grams of soybean oil, 15 grams of salt and pepper
How to dry-fried cauliflower:
1. Cut the cauliflower into uniform small pieces, wash them, and put them into a pot of boiling water. Blanch it, take it out, cool it, drain the water, and mix well with salt, monosodium glutamate, and pepper to taste.
2. Add 25 grams of flour, 10 grams of starch and oil to the egg liquid to make an egg powder paste.
3. Sprinkle the cauliflower with dry flour and stick it evenly, then add the egg powder paste, deep-fry it in 50% hot oil and remove it. When the oil temperature rises to 70% hot, add the cauliflower and fry again. When it turns golden brown, take it out and put it on a plate. Serve with pepper and salt.
