Fresh termites, eggs and chicken oil
Clear water garlic pepper salt
How to make chicken fir and egg soup?
Scrape the mud off the feet of fresh termites, rinse it under running water, tear it into small pieces and drain it for later use;
Cook a proper amount of chicken oil (or lard, or olive oil, or salad oil without animal oil) in a wok, beat in the whole egg and fry until golden on both sides-the egg can be fried a little older and the soup will be more fragrant;
Pour in termites and stir-fry until the water is soft, and then simmer for a while;
Add boiling water, bring it to a boil, then turn it into a soup pot, bring it to a boil with high fire, add two garlic, sprinkle a little pepper (if you don't like it, don't put it), and turn to low heat and cook slowly;
Cook until the mushrooms are cooked and the soup is bright and fragrant, then adjust the salt taste, turn off the heat, put it in a bowl and sprinkle with chopped green onion.
