1. Wash celery and garlic sprout, cut into 5cm pieces, cut red pepper into rhombic pieces, peel garlic and beat ginger evenly.
2. Wash the beef tendon, blanch it in water for 2 minutes and then remove it.
3. Put the cattle in a pressure cooker, add ginger, dried pepper, star anise, Amomum tsaoko, cinnamon, fragrant leaves, kaempferia kaempferia, fennel, soy sauce, cooking wine and salt, add enough water to cover the surface of the steak, and cook for 20 minutes on medium fire after boiling.
4. After the pressure cooker cools and exhausts, open the lid and take out the steak and seasoning.
5. Pour a proper amount of vegetable oil into the wok, stir-fry the garlic cloves after the oil temperature is high.
6. Pour the steak into the pot, fry it dry, add soy sauce and sugar and stir well.
7. Add red pepper, celery and garlic and stir fry for a while. Add a little salt to taste and serve.
