Wash the fish and remove the scales and viscera, then make a knife. Slice ginger, chop cilantro and set aside.

The pot is hot, add the right amount of oil, add star anise, dried chili peppers, onions and ginger, pepper grains burst the pot, and then add the bean paste and stir fry.

Put the fish into the pan and fry until the surface is ripe, then add appropriate amount of water, salt and cooking wine. Bring to a boil over high heat and simmer for 10 minutes. (Turn the fish in the middle)

Serve the fish when it is cooked and put it on a plate. Add cornstarch to the soup in the pot and reduce the sauce over high heat. After pouring the soup over the fish, sprinkle some chopped green onion and cilantro on it.
