Steps to make cookies
To make a cookie

Making of vanilla dough: soften the butter (you can microwave it properly in winter), add granulated sugar and mix well.

Add egg yolk, mix well.

Drop in the vanilla extract and mix well.

Sift in the low flour and stir.

Add the water, knead the dough and let it rest for 15 minutes.

Roll out to desired thickness, in my case 0.5cm thick, and cut into rectangles.

The chocolate dough is made in the same way as the vanilla dough. Roll out the chocolate dough to the same thickness as the vanilla dough, cut it into equal sizes, and brush the top with a layer of whole egg wash as a binder.

Place the vanilla sheet on top of the chocolate sheet.

Slice into 1cm wide strips and crisscross them, again using the whole egg wash as a binder.

Roll out the remaining vanilla dough into thin slices.

Brush the surface with whole egg wash and wrap the folded checkerboard dough around it, cutting away as much of the vanilla crust as you can.

Refrigerate for half an hour, remove the dough when it is firm and cut into slices, about 0.5cm thick.

Place on a baking sheet, leave some gaps in the middle to allow for slight expansion when baking, and bake at 180 degrees Celsius for about 15 minutes in the middle of the oven on medium-high and low heat
Tips
1: You can add or leave out water as you see fit in the ingredients, and adjust appropriately with the softness or hardness of the dough as it forms into a ball
2: We recommend that you don't whisk the butter in this case (whisking means that it will be lighter in color and fluffier in volume). (lighten the color, volume fluffy), whipped butter to do the cookies will be more loose, if not whipped cookies will be tighter, in order to bake the cookies are not too loose, keep the shape, so it is recommended that the first step in the granulated sugar a little mixing on it
3: baking if the color is too fast can be covered with tinfoil
