How to pickle radish slices:
Prepare ingredients: 1000 grams of white radish, 100 grams of garlic, 50 grams of spicy millet, 300 grams of light soy sauce, 300 grams of mature vinegar, and 150 grams of sugar.
1. Wash the white radish, remove the head and tail, cut it in the middle, and divide it into four parts.
2. Cut the separated white radish into three pieces and cut it into pieces with a razor blade. This cutting method can make the pickled radish slices more flavorful without losing their crisp texture.
3. Cut all the white radish into pieces and put them in a basin. Add 20 grams of salt and 20 grams of sugar. Stir evenly to kill the water in the radish slices. The process of killing the water takes more than 2 hours. During this period, it needs to be turned several times to fully penetrate the salt and sugar into the radish and kill the water in it.
4. Next prepare the auxiliary materials needed for pickling the radish slices: cut the garlic into slices, remove the stems of the spicy millet and cut into small pieces.
5. Prepare a large bowl. Add 300 grams of light soy sauce, 300 grams of mature vinegar, and 150 grams of white sugar into the bowl. Stir evenly and melt all the sugar. If you want pickled radish to be delicious, the ratio of the sauce is very important. The ratio of light soy sauce, mature vinegar, and white sugar is 2:2:1.
6. After removing the water from the white radish, pour out the water, and then drain away the excess water.
7. Place the processed radish slices in a clean, water-free and oil-free container for later use, such as crisper boxes, pickle jars, and cans.
8. Put the chopped garlic slices and spicy millet segments into a crisper, then pour in the prepared sauce, put it in the refrigerator and marinate overnight before eating.
