Almond Banana Muffin Cake

Recipe Description

This was my second time making muffins, and because of my experience with apple muffins, this time it was a big win. And I was surprised to find out that bananas are just delicious in cake, so I'm coming over to share it quickly! Rich bananas with crunchy sliced almonds, plus I added light cream for extra creaminess. The flavor really can't be beat!

Ingredients

200g of gluten flour, 80g of sugar, 120g of butter, 12 tsp of salt, 1 tsp of baking powder, 2 eggs, 3 bananas, 100ml of milk, 50ml of light cream, sliced almonds

Directions

1. Mix the flour, salt and baking powder, then sieve and set aside.

2. Soften the butter at room temperature, add the sugar and beat with a whisk at low speed until the butter turns white and increases in volume.

3. Cut two bananas into small pieces and put them into a blender, then pour in milk and light cream to make a milkshake. Cut the other banana into small pieces and set aside.

4. Beat the eggs and add them to the butter in three batches, each time making sure that the eggs and butter are completely blended before adding the egg mixture.

5. Add the processed egg butter paste to the flour, pour in the beaten banana milkshake and chopped bananas with a spatula from the bottom upwards and mix well, be careful not to draw a circle to mix.

6. Pour the tuned muffin batter into the mold, filled with 2/3 on it, sprinkle slivered almonds on top. Preheat the oven, 180 degrees oven up and down heat bake 25 minutes is ready!

Hundred times cake - Whole Wheat Banana Almond Cake

Recipe Description

There are many stories about this cake. This would be the first cake I've actually made successfully, having made cheesecake before, which was unsuccessful and hard. I made it in a new eight-inch "black pan", which is my husband's new name for the eight-inch mold. Ever since I saw Zixia's Whole Wheat Banana Cake, I've been eager to try it. The cake was pushed back from Thursday to Saturday, and I didn't get around to making it until almost 11:00am. The recipe is from the Baking Book, with a few modifications. The name "Hundred Times Cake" is another one of my husband's names, meaning a cake that is baked a hundred times before it is eaten. The recipe says to serve in small paper cups and bake for 20 minutes. I used an 8-inch black pan and baked it for 20 minutes. I poked it with chopsticks and found that it was not cooked, so I baked it for 10 minutes, but it was still not cooked, so I cut it open and baked it for 15 minutes more. The first photo was taken after 30 minutes of baking, and I ate a piece of the cake before I took the photo. Hubby said I baked the cake just like other people baked a whole goat, bake one layer and eat one layer! The cake tasted pretty good, and people like hubby who don't like desserts broke down and ate two pieces.

Ingredients

220g butter, 150g granulated sugar, 3g salt, 2 eggs, 240g gluten flour, 90g whole wheat flour, 5g baking powder, 3g baking soda, 5 ripe bananas, slivered almonds, raisins, a little

Method

1, butter (I put 180g), sugar (I put 100g, or a little Sweet, next time you can put 90 grams) and salt into the container slightly whipped, my understanding is that the butter is slightly white.

2, add the egg in two parts, mix well.

3, bananas peeled (I only bought 4 ripe, only a dollar, very sweet), mashed into a paste, add butter egg paste, mix well.

4, powder sieve, add butter egg paste, mix well.

5: Pour the batter into the mold and sprinkle sliced almonds and raisins on the top.

6. Bake at 160 degrees for 45 minutes.

Tips

If you use small paper cups, you can fill 15.
