Ingredients: 3 egg yolks, 80g refined sugar, 1 tbsp cornstarch, 1 cup milk, 3/4 cup whipping cream, vanilla extract, whipped cream, mint leaves (for decoration).
Method : 1: Place egg yolks in a bowl and whisk in refined sugar; when yolks turn white, whisk in cornstarch.
2, put the milk and whipping cream in a pot, stir well with a wooden spoon, and heat until almost boiling. Add a little of this to the egg mixture and stir well.
3. Transfer to a saucepan and heat over medium heat until thickened.
4: Hold the bottom of the pan close to the ice water and stir while it cools. Once cooled, stir in vanilla extract, transfer to stainless steel molds, and place in the freezer for 1-2 hours.
5: Once slightly frozen, remove to a bowl and stir with a whisk. Transfer to a flat-bottomed mold again to level the surface, and repeat this 3-4 times.
