Heat oil in a hot pan to 90 degrees.
02Turn down the heat and beat in the washed eggs.
03Sprinkle a few drops of water in the pan and quickly cover the pan with a lid.
04Use the water vapor in the pan to curdle the egg whites.
05Turn off the heat after 30 seconds and let it sit for 5 seconds before removing from the pan.

Loose Eggs 01Prepare a pot of boiling water.
02Place the washed eggs in the pot.
03Turn down the heat and keep the water temperature at about 80 degrees. Stir clockwise, then counterclockwise. Repeat this several times so that the yolk stays in the center of the egg.
04Turn off the heat and fish out the eggs after 5-6 minutes. Rinse continuously under cold water and once the surface has cooled, shell and halve.
Steamed Eggs 01Take two eggs and wash them, then whisk and beat them well.
02According to the ratio of 1.5 times the egg mixture, add 30 degrees of warm water and mix well.
03Strain the egg mixture to filter out air bubbles and avoid air holes on the surface of the finished product.
04Cover with a cotton cloth and cover with a lid to prevent moisture from entering.
05Steam on high heat for 7-8 minutes, turn off the heat and remove the crockpot to open.
06Drizzle with sesame oil and soy sauce to serve.
