Bacon is a traditional diet of Tujia people in Enshi and a luxury for Tujia people to entertain guests. Every time a distinguished guest visits, the hospitable Tujia people will pick out some preserved sausages, bacon and their own smoked pig's trotters, and cook a sumptuous bacon dinner after some burning, washing, cutting and chopping.
Bacon's origin is not verified. However, there is a saying circulating now. Tujia and Miao people in Xiangxi used to be called barbarians. They are descendants of the Chiyou tribe who competed with the Yellow Emperor for the world. Due to the defeat, their ancestors lived in seclusion in the mountainous areas of western Hunan for a long time. Living a hunting life, at first, they just hung the unfinished wild pork on the trunk to dry, and then used it to eat when food was in short supply. When it rains, they put the meat on the fire to dry and then eat it. It is found that the meat baked by fire smoke tastes particularly fragrant. In the future, they will use this method for a long time to deal with unfinished prey.
