1. Chestnut stewed chicken
Ingredients: one old hen, 300g chestnuts, 10g ginger, 50g rice wine, 5g salt, 1.5g MSG.
Method: Cut the prepared old hen into small pieces, take it out of the boiling water, drain it and set aside. Cut 300g chestnuts one by one, boil them in boiling water to ensure that the chestnuts are cooked, and then remove the chestnut shells. Add the chopped chicken pieces, rice wine, sugar, ginger, and water to the casserole. 2. Chestnut, sweet potato and pork ribs soup
Ingredients: 400g shelled chestnuts, 2 sweet potatoes, 400g pork ribs, 4 red dates.
Method: Wash the ribs with clean water, boil them in cold water, take them out, and cut 2 sweet potatoes into large pieces. Add the prepared ribs, chestnuts, red dates and ginger slices to the boiling water in the pot. Cook on high heat for 20 minutes, then turn to low heat and cook for about an hour. Then add the chopped sweet potatoes and continue cooking for another 20 minutes before adding them. Seasoning, turn off the heat and serve.
3. Chestnut roasted mutton
Ingredients: mutton, chestnuts, onions, ginger, garlic, salt, sugar, cooking wine, star anise, bay leaves, etc.
Method: Cut the mutton into small pieces and add the onion, ginger and garlic. Heat oil in a pot, add the prepared star anise, bay leaves, green onion, ginger and garlic and sauté until fragrant. Then add the empty mutton and continue to stir-fry. Add water, dark soy sauce, cooking wine, light soy sauce, sugar, etc., stir-fry and stew. After about 30 minutes, add the chestnuts and simmer for another 20 minutes before turning off the heat and serving.
