Steps
1.Prepare one pork elbow, wash it well and set aside.
2. Cut a slice on the inside to remove the bones.
3. Pour three small spoons of salt into the frying pan, without oil, and directly stir-fry the salt until it turns yellow.
4. Turn off the heat and put in the peppercorns, stir fry the flavor.
5. Then pour it into the elbows, knead it with your hands so that the salt is fully kneaded, then press the elbows with a slightly weighted object and marinate them for three days, turning them over one to two times a day.
6. Wait until it is salted to taste, before rinsing with cool water, water control, and then the elbow rolled and tied with string.
7. Then put it into a steamer and steam it over medium heat for about one and a half hours.
8. Steamed through the slices to plate.
