When I went to Guangzhou to look for food the year before last, one of my favorite dishes I ate was the Crab Roe and Tofu Casserole from Huishijia.
These dishes are fresh and tender, and they are great with rice!
Main Ingredients
Salted duck eggs (3) (all salted egg yolks can be used)
Tender tofu (2)
Tofu with lactone is better, but the third-tier small cities of the market and supermarkets do not sell ah fall!
Accessories
Shrimp skin (three tablespoons)
Scallion (a small handful)
Ginger (a small piece)
Ham sausage (1)
Seasoning
Peanut oil, sesame oil, salt, oyster sauce, cooking wine, rice vinegar, cornstarch, white pepper powder
1.Cutting and matching:
Wash all ingredients.
Peel out the egg white and yolk of salted duck eggs and crush them separately with a spoon; peel ginger and cut ginger paste; cut ham into small diced dices; flatten green onion white with the side of a knife, cut into segments, and green onion green and cut into scallions.
Ginger with a spoon scrape, peeled so easy.
With the back of the knife chopped ginger paste, easier to get out of the juice.
2. Blanch tofu:
Cut the tofu into small pieces and put it in a pot of cold water, add a small spoonful of salt to the water.
Water bubbles, will roll not roll, fish out and set aside.
Try not to stir the tofu; if it's not evenly distributed, gently shake the pan or push it with the back of a spatula.
Blanching once beforehand is to remove the fishy astringent flavor of the tofu, and let the tofu better shape, cooking is not easy to break, do not recommend in this step lazy yo ~ (this tip is with @ wenjia big university)
3. stir fry "crab meat":
High heat will be the pot of red heat, then turn on the low heat, pour in a little oil. a little oil.
Add the white onion and fry it for flavor.
Roughly until fried to this extent (do not need to be very dry, there is onion flavor on the line), fish out and discard.
Hot pot cold oil, cold oil under the ingredients.
Add the shrimp and ginger paste and stir-fry until the shrimp crackle and pop and are lightly charred.
Add salted duck egg yolks and stir-fry until fine and even, then pour in cooking wine (one porcelain spoon) and oyster sauce (half a porcelain spoon).
Add salted duck egg white and diced ham, stir fry slightly.
Stir fry the crab roe over low heat.
In the order of the pan: white onion, shrimp skin, salted duck egg yolk, salted duck egg white and diced ham
4. Stewed tofu:
Transfer the scrambled crabmeat to a casserole dish and add the tofu.
Pour a bowl of boiling water (broth is better), cover, simmer for two or three minutes.
No casserole, directly in the frying pan stew can also be, but "crab tofu" and "crab tofu casserole" compared to the latter obviously sounds cooler. (You've got to have the whole package!)
Drizzle in the appropriate amount of water starch (cornstarch: water = 1:3).
Uncovered, reduce the juice over high heat.
Stinky tofu "smells bad" because the tofu in the fermentation and marination and fermentation process, which contains proteins in the role of protease decomposition, sulfur amino acids contained in
