The origin of Mao Blood Want
There was a Wang Xing butcher at the water dock in the ancient town of Magiqikou in Shapingba, Chongqing, who disposed of meat scraps at a low price every day. Wang's daughter-in-law Zhang felt pity, on the street to sell miscellaneous soup stalls, with pig head, pig bones simmering ginger, pepper, cooking wine, add peas to make soup, add pig lung leaves, fat intestines. The flavor is particularly good. A chance encounter, Zhang put fresh pig blood tofu directly into the minced pork soup, and found that the pig blood tofu more tender, more fresh flavor. The dish was cooked and eaten, hence the name Mao Blood Wanton. The word "Mao" is a Chongqing word meaning "rough and tumble". There are also offal, lily pads and other scraps as the main ingredient.
