Accessories: oil, Pixian bean paste, soy sauce, cooking wine, vinegar, sugar, onion, ginger and garlic.
1. Remove scales, gills and internal organs, and clean the fish.
2. Drain the water after repeated washing.
3. Heat oil, saute shallots, ginger and garlic, add Pixian bean paste and stir well on low heat.
4. Cook cooking wine and stir-fry red oil.
5. Add the right amount of soy sauce and stir fry over low heat.
6. Add appropriate amount of water to boil, and simmer for 2 minutes to remove slag.
Put in spare fish
8. Bring to a boil, add vinegar and sugar to taste, and simmer for 5 minutes.
9. Reduce the heat and stew for another 2 minutes.
10. Turn off the fire after collecting juice on the fire.
