Method 1:
Materials:
550 grams of beef brisket, 5 slices of ginger, 1 garlic, 4 star anise, 200 grams of potatoes, 100 grams of carrots, Seasonings: 30 grams of rock sugar, 2 tablespoons of hoisin sauce, 1 tablespoon of light soy sauce, 2 tablespoons of rice wine, 1200ml of water
Steps:
1. Cut the beef brisket into 40mmX40mm squares blocky.
2. Boil water in a pot, add beef brisket and blanch until the water boils, remove and wash and set aside.
3. Heat 1 tablespoon of oil in a pot, add rock sugar, and cook over low heat until it melts and turns into caramel color.
4. Add ginger slices, green onion segments and star anise and stir-fry until fragrant.
5. Add beef brisket and stir-fry until evenly colored.
6. Add rice wine and seafood sauce, stir-fry until evenly colored.
7. Inject 1200ml of water and light soy sauce. The amount of water should be about 30mm higher than the meat. Bring to a boil over high heat and then simmer over low heat for 90 minutes.
8. In another pot, add 1 tablespoon of oil, add diced carrots and potatoes and fry until the surface is slightly yellow.
9. Pour the beef brisket and soup into the pot together. After boiling, continue to simmer for about 60 minutes.
10. When the soup is left in a shallow bottom of the pot, you can easily insert the lean meat part with chopsticks.
Method 2:
Materials:
300 grams of beef brisket strips, 1/2 white radish, 1 carrot, 3 ginger slices, 3 garlic slices cloves, 2 green onions, 1 red pepper, 3 tablespoons of salad oil, 3 tablespoons of soy sauce, 6 cups of water, 1 packet of marinated buns, 2/3 tablespoon of rock sugar
Steps:
1. Cut the beef brisket strips into 5 cm pieces, blanch them in a soup pot for 5 seconds, remove and wash and set aside.
2. Peel the white radish and carrot, wash and cut into pieces and set aside. Wash the ginger and cut it into diagonal slices. Wash the onions, garlic and red pepper and set aside.
3. Heat the salad oil in a wok, add the processed ingredients and sauté until fragrant.
4. Add beef brisket and stir-fry until half-cooked, then add soy sauce and stir-fry.
5. Add 6 cups of water, boil the braised buns, rock sugar and green onions for 5 minutes.
6. Add red and white radish cubes and simmer over medium-low heat for about 35 minutes until the meat is cooked.
