Ingredients: squid (fresh) 250g, mung bean sprouts150g, lard (refined) 50g, cooking wine15g, monosodium glutamate 2g, scallion10g, salt 4g and sesame oil 5g.
Clear fried dried squid steps:
1. Wash the squid with clean water and cut it into 5 ~ 6 cm long and 0.2 cm wide filaments;
2. Put it in a earthen bowl, pour in clear water and soak it for 2 hours, take it out and drain it;
3. Peel and leave the onion and cut it into filaments;
4. Take off the head of mung bean sprouts, wash the roots, blanch them in boiling water, remove them, and drain the water;
5. Put it in a plate, add some cooking wine and monosodium glutamate and mix well;
6. Put the pot on the fire, add lard and burn it at 60% to 70% heat, add shredded squid and stir-fry it quickly;

8. As soon as the soup is boiled, add monosodium glutamate and mung bean sprouts, toss evenly, pour in sesame oil, and serve.
