1. Ingredients: 850 grams of chicken, 200 grams of fermented oil, 20 ml of cooking wine, 80 grams of Huadiao wine, 5 grams of shallots, and 6 grams of ginger.
2. Blanch the chicken in cold water, pick it up and wash it.
