As follows:
2 lotus root sections, appropriate amount of glutinous rice, 10 red dates, appropriate amount of water, 2 large pieces of old rock sugar, 2 pieces of brown sugar, and a handful of toothpicks.
1. Wash the glutinous rice and soak it in water for more than two hours.
2. Cut a little off one end to use as a lid. Then clean the hole in the middle of the lotus root joint.
3. Take out the glutinous rice and carefully stuff it into the hole of the lotus root joint.
4. Every hole needs to be filled, try to fill it as much as possible.
5. Place the lid on the other half of the lotus root section stuffed with glutinous rice. Secure with toothpicks.
6. Pour appropriate amount of water into the pot. Add rock sugar. Turn on low heat and stir-fry slowly.
7. Then put the lotus root joints and red dates into the rice cooker.
8. Slowly fry the rock sugar until it turns into caramel color.
9. Then add a large bowl of water. The sugar will condense when it gets cold, and it will melt after frying for a while.
10. Pour the fried sugar water into the pot, basically submerge the lotus root joints, and add brown sugar. Steam for one hour.
11. An hour later. Keep warm and soak for more than two hours.
12. Freshly taken out lotus root joints.
13. Place on a clean cutting board, remove the toothpick and slice.
14. Arrange on a plate and pour the boiled lotus root soup on top.
