1. Make soup: add 10g high-gluten flour and 45g milk in a non-stick pan, cook and stir until it becomes a thick paste. Allow to cool to room temperature before use, or refrigerate for later use.

2. Put all the ingredients except butter into the cooking machine, put the coffee liquid and soup seeds together, stir at 2 speeds to form a dough, then change to 4-5 speeds to knead out a thick film, add softened butter, and knead out the glove film.

3. Place it in a fermentation box or ferment at room temperature 28° until the dough doubles in size (about 60 minutes).

4. Take out the fermented dough and press it gently to deflate. Divide the dough into 3 equal parts and roll into balls. Cover with plastic wrap and rest at 28° for 15 minutes.

5. Take a piece of dough with the smooth side facing up and roll it out with a rolling pin. Turn it over and arrange it into a rectangular shape. 6. Place in a fermentation box or oven at 35° (add a cup of hot water to maintain humidity) and let it rise until it is 9 minutes full.

7. Preheat the oven in advance, set the upper heat to 160 degrees and the lower heat to 180 degrees. Bake for 30 minutes (low sugar toast box). For other toast boxes, add 5 minutes more. 8. Remove from the oven and let cool. If you can't finish the toast within two days, put it in the refrigerator and bake it in the oven at 150° for 3-5 minutes before eating.
