Southern people must eat a bowl of dumplings for the Lantern Festival, while the northern people eat is the Lantern. Many people can not figure out the difference between dumplings and snacks, and even think they are the same kind of food, in fact, the two from the production method is completely different, not to mention the taste and flavor.
One, Lantern
The flavor of Lantern is usually sweet, at first only sesame flavor, with the standard of living is getting better and better, and gradually increased hawthorn filling, fruit filling and so on. To make delicious Yuanxiao, you first need to start making the filling by kneading the filling and then compacting it completely so that it won't suddenly fall apart when you are making it. Soak the filling in water for a second or so, take it out immediately, put it into a frame with glutinous rice flour, shake the basket to make the filling roll up, at this time the surface of the filling will be coated with a thick layer of glutinous rice flour. Keep repeating this action, dipping and rolling. Repeat this process about a dozen times, and you've got a tasty snack. Lanterns have a relatively short shelf life and are not suitable for storage in the freezer, so they are basically unseen on the market except for the Lantern Festival.
Two, soup dumplings
The 60 degrees of warm water plus glutinous rice flour completely mixed well, kneaded into a smooth dough, take the appropriate amount of glutinous rice dough wrapped in their favorite fillings, closed properly shaped, you can put directly into the pot to cook. Soup dumplings can be kept for a longer period of time and will not crack even when frozen. The flavors of the fillings are more diversified, so you can choose savory meat fillings or sweet fruit fillings.
Soup dumplings and dumplings are made with almost the same ingredients, but because they are made with different processes, they taste completely different. Soup dumplings are wrapped in dough, so they have a relatively soft and sticky texture, whereas the Yuanxiao are rolled out and have a firmer, drier texture. Soup dumplings can be fully cooked in about 3 to 5 minutes, and the water is clear and translucent. Whereas the Yuanxiao need to be cooked for more than 10 minutes to be fully cooked, and the soup that comes out of it is relatively cloudy. So these are two completely different foods, do not confuse them.
