About 800g crucian carp, 20 red peppers, 20 wild pepper pickles, 1 onion, 3 garlic 1, 1 small piece of ginger, 2 teaspoons of wine, half a teaspoon of salt, half a teaspoon of chicken essence, appropriate amount of oil
Method
1. Wash all materials, pickle red pepper and wild pepper Chop them separately, chop the onions into finely chopped green onions, chop the garlic into small pieces, and chop the onions into finely chopped pieces.
2. Divide the white part of scallions, minced garlic and minced ginger into two parts, add small chili peppers and pickled peppers respectively, and chop them evenly.
3. Place the crucian carp on the steaming plate, add wine, salt and chicken essence, and spread the inside and outside of the crucian carp evenly.
4. Spread the pickled and chopped pepper on half of the crucian carp, and then spread the red chopped pepper on the other half of the crucian carp.
5. Put water in the pot and bring to a boil over high heat. Put the fish head into the pot and steam for 8 minutes.
6. Take out the crucian carp and sprinkle with chopped green onion.
7. Heat the oil in a hot pan until green smoke comes out, then pour it on the crucian carp.
