Why can't germinated and green potatoes be eaten?
Ding-a potato is easy to store. Usually, when there are no potatoes, my mother always takes out a few to burn. However, after a long time, some potatoes will sprout small hairs, while others will turn green. My mother said that this kind of potatoes can't be eaten. Why? A: Because these potatoes contain a lot of toxic substances-Solanum nigrum. When potatoes are intact, the content of solanine is very small, and generally only 10 mg of solanine is contained in 100 g. However, when potatoes are immature, germinate or turn green, solanine in potatoes will increase sharply, especially in buds, bud eyes, skins and green places. Solanum nigrum is seriously corrosive to human digestive tract mucosa, which can destroy red blood cells and cause hemolytic reaction. In severe cases, it can cause brain edema, paralyze respiratory center and motor center, and lead to death. Eating a very small amount of solanine has no obvious harm to human body, but if you eat 200 mg at a time, it will cause serious poisoning. If you feel a little numb in your mouth when eating potatoes, it means that the potatoes contain more solanine, so you should stop eating them immediately to prevent poisoning. Besides immature, sprouted and green potatoes, you can't eat them, and the cleaning and cooking of potatoes are also very knowledgeable! First of all, potatoes must be peeled and eaten, because solanesol is generally concentrated in the epidermis of potatoes, and peeling can remove 30%-90% of toxins. Secondly, cut the peeled potatoes into small pieces and soak them in cold water for more than half an hour, so that the remaining solanine can be dissolved in water.
