1. Soak and dry squid in salt water. Method: Prepare 3 cups of warm water, add 5 tablespoons of salt, mix well, add the dried squid, soak for 2-3 hours, and then wash (you can also add 1 tablespoon of rice wine to the salt water to remove the fishy smell). Soaking dried squid in salt water can retain the aroma and chewiness of the dried squid, and is suitable for making Hakka stir-fries, fried rice, and soups.
2. Soak dried squid in alkaline water or baking soda powder. Alkaline water method: Prepare 3 cups of water, add 1 tablespoon of edible alkali, mix well, then put in the dried squid and soak it for 2-3 hours (if you like it softer, you can soak it for 6-8 hours, the squid can be bigger) ), change the water a few more times, and continue soaking and rinsing for 2-3 hours to completely remove the alkaline smell.
3. Soak the dried squid in sesame oil. If you don’t have baking soda, you can also soak the dried squid in warm water with sesame oil. Generally, 500 grams of dried squid can be dried with 10 grams of sesame oil until soft and swollen. Moreover, the alkali content of dried squid soaked in this way will be lower, making it easier to clean.
