You can use ordinary flour (such as Fuqiang flour, standard flour) for making wontons. The dough should be moderately soft and hard, neither too soft nor too hard is good.
How to knead the dough to make wontons? How to knead the dough so that it is soft and hard? This requires attention to the skill of kneading the dough. The way I usually knead the dough is to first put the flour in a bowl, add water while stirring it into a flocculent shape with chopsticks, and then knead it with your hands into a dough of moderate softness and hardness. It doesn’t matter if the dough is not smooth at this time. Cover the kneaded dough with a damp cloth or plastic wrap for 20-30 minutes. In this way, it is easy to roll out the skin and stuff it when making wontons, and the wontons will not break easily.
How to make beef wonton filling:
1. Chop green onions and ginger. Add more green onions here to make the wonton stuffing taste fragrant;
2. Add green onions, ginger, pepper, allspice, salt, sugar, soy sauce and sesame oil to the beef filling, and mix it in one direction. Stir it evenly until stiff.
How to make wonton wrappers:
1. Take out the risen dough and knead it vigorously on the chopping board until smooth;
2. Roll it out with a rolling pin Cut into large dough sheets about 2 mm thick;
3. Cut the dough sheets into square wonton wrappers about 6 cm wide and set aside.
Take a piece of wonton wrapper, put the meat filling in the center of the wonton wrapper, fold it in half, pinch the edges tightly, then fold the two corners and pinch them together, and a wonton will be wrapped. Repeat this until all the wonton wrappers and meat fillings are used up.
Note: You can pack more wontons at a time and store the rest in the freezer of the refrigerator. It is very convenient to eat as you go.
