Ingredients:
One 1750g native chicken, 4 white scallions, 4 slices of ginger, some jujubes and wolfberries.
Method:
1. Wash the chicken and drain it;
2. Blanch it in a pot of boiling water for 2 minutes and take it out;
3. In another pot, add the blanched chicken, add onion and ginger, add covered hot water and bring to a boil over high heat;
4. Reduce heat and simmer for one hour, remove the onion. Discard the ginger;
5. Add the rinsed jujube and wolfberry, and continue to simmer on low heat for 30 minutes;
6. Add an appropriate amount of salt before serving.
