First Steps
1. Clean the fish and cut diagonal slashes on the fish. This fish is too big to be steamed in my steamer, so I cut it in half.

2. Rub a little cooking wine on the fish. Because it is fresh, there is no need to put onion and ginger to remove the fishy smell.

3.? Steam the pot until the water boils into the fish plate, and put in the steamed fish soy sauce at the same time on high heat to steam for about 10 minutes (according to the weight), after that turn off the heat and smother until 5 minutes, then you can serve it out.

4. 4, serve the fish and then sprinkle some shredded green onion on the fish. The only vegetables currently surviving in my garden are a couple of green onions and 1 pepper, so I took what I had and used only 1 green onion and 1 small red bell pepper. You can boil hot oil and pour it on, that way the onion flavor is strong and the fish will be brighter. But it's hotter in NZ now, and I wanted to have a lighter meal, so I didn't pour it on.
