After buying pig liver, it needs to be soaked first, usually there are 2 ways to do it:
Soak it in lightly salted water for 2~3 hours first, then put it into clean water to soak.
Rinse the surface of the bought whole pig liver with running water, then add a little white vinegar to the water, soak it for 30 minutes before removing it, and then rinse it again and again with clean water.
Next, you can cut the liver into 5 mm slices, rinse repeatedly with running water until no blood seeps out, to remove the toxic substances remaining in the liver, while removing the odor. If you want to save soaking time, you can directly cut the liver into thin slices, rinse it repeatedly with running water until no blood seeps out, and then soak it in white vinegar for about 10 minutes.
When cooking, many people think that a shorter cooking time will make the livers more tender, but be careful not to cook them too short; they should be stir-fried over a rapid fire for at least 5 minutes to make sure that all the livers turn a grayish-brown color until there is no more pinkish red color from the original livers. If you are not sure if it is cooked, choose one of the pieces and poke it with chopsticks; it is cooked if it penetrates and no juice comes out. Cooking and heating the liver can kill some microorganisms that may be present in the liver to ensure dietary safety.
Warm tips:If you think the liver is fishy, you can marinate it in advance with a little salt and a little wine, add some vinegar and garlic to improve its flavor during the frying process, or add some spinach to cook with it***. In addition, it is best to buy pork liver now, so as to maintain the fresh flavor, but also to ensure the nutrition and hygiene of pork liver. If you can't eat it for a while, it's best to put it in the refrigerator and eat it as soon as possible.
