Sun: Medicine and food are homologous, and they are all natural things. In a broader sense, medicated diet is the combination of medicine and food, cooking delicious food with auxiliary therapeutic effect.
Wang Yi: In traditional Chinese medicine, there are three concepts related to diet health care, namely, food supplement, dietotherapy and medicated diet, among which medicated diet is the highest. Dietotherapy has played the role of health care that we often say, while medicated diet is used as an auxiliary treatment. With regard to its strict definition, the explanation in the textbooks of Chinese medicine colleges is: for the purpose of adjuvant treatment of certain diseases, according to the principle of syndrome differentiation and treatment of Chinese medicine, a certain proportion of Chinese medicine is added to the diet as dishes or other foods, combined with drug therapy and dietary nutrition, so as to achieve the purpose of treating diseases and restoring health. In other words, medicated diet should be a dietotherapy dish made in strict accordance with the theories of traditional Chinese medicine and nutrition. The dishes cooked by people who don't know these professional knowledge can't be called real medicated diet, even if more Chinese medicines are put in. At most, they can play the role of food supplement.
Moderator: Many ordinary people have the experience of buying some herbs to go home and cooking for their own health. Everyone seems to habitually treat this as a medicinal diet. Excuse me, experts, what are people's misunderstandings about the concept of "medicated diet"
Zhang: First of all, medicated diet is not an ordinary food. But now many ordinary people just eat food containing medicinal materials at will according to their own understanding of medicinal materials, without knowing their own situation, and think that this is a "medicated diet", which is very unscientific. Traditional Chinese medicine pays attention to syndrome differentiation and treatment, which is also applicable to medicated diet. How to eat has a lot to do with everyone's physique, illness, age, occupation and external environment. Pay attention to people, time, disease, place and season. In addition, the amount of food is also very important. Some people think that ginseng is a tonic, and eating half a catty at a time will burn your body. Before eating medicated diet, you must first find out what your problem is. Not all diseases can be cured by medicated diet. Just like erectile dysfunction, many people hope to "make up" through medicated diet, but in fact there are many reasons for this disease. For example, some cases are caused by psychological reasons and can't be cured only by taking medicated diet.
Jun Xu: That's right. Eating medicated diet varies from person to person. In addition, Chinese medicine pays attention to compatibility, and different medicinal materials will affect each other. You may know the function of a certain medicinal material very well, but if it is not properly matched with other medicinal materials or even food, it may not achieve the desired effect. For example, ginseng and radish cannot be eaten together, which is a familiar compatibility taboo.

Lu Chunjing: Medicinal diet, not only a dish should be properly matched, but also a table should be properly matched. In addition, Chinese medicine pays attention to processing methods, and medicinal diet naturally pays attention to cooking methods. At the same time, we should look at medicated diet from a developmental perspective. Now that people's body has changed, the spectrum of diseases has also changed, and some old medicinal prescriptions have to change with it.
Wang Yi: Eating medicated diet has a very important premise, that is, if you have a disease, you can achieve the role of adjuvant therapy through the compatibility of medicated diet. The preparation of medicated diet must follow the nature of medicinal materials and respect the theory of traditional Chinese medicine. The same medicine, boiled in water and boiled in soup, has different effects. Even if it is an ordinary carrot, when we give it to different patients, we will pay attention to everyone's condition and physique, and adopt different doses and methods to achieve the therapeutic effect. In addition, the research of traditional Chinese medicine is more scientific, the pharmacology is richer, and the medicinal diet is more scientific. For example, stewed duck with Cordyceps sinensis used to be a medicinal diet. People used to think that Cordyceps sinensis was an elixir, but modern science thinks that Cordyceps sinensis belongs to the same fungus as mushrooms. Not everyone can cook medicated diet.
Moderator: In this way, eating medicated diet is not a casual thing, and making medicated diet is not as simple as we thought. So, how should ordinary people eat medicated diet? Can anyone do it?
Wang Yi: As the highest concept in the dietary nutrition theory of traditional Chinese medicine, medicated diet can be said to be a comprehensive subject, which requires a lot of producers. To be a qualified medicated diet teacher, you must have knowledge of pharmacology, nutrition, food chemistry, food technology, cookery and so on, and you must have formal institutions for professional training.
The requirements are so high that even a simple Chinese medicine practitioner, nutritionist, chef and pharmacist can master them. Ordinary people naturally have no ability to cook medicated diet, or the dishes with herbs cooked by ordinary people do not belong to the category of medicated diet.
Frontier: After all, ordinary people are not doctors. It is difficult for ordinary people to master such rich knowledge about the national requirements for medicinal materials, medicinal properties and compatibility of medicinal materials. Therefore, medicated diet is not suitable for non-professionals, and it is best for people who need to treat diseases to eat under the guidance of professionals.
Jun Xu: The fear of cooking medicated diet is that the medicinal properties are not well mastered and the medicinal flavor is very strong. So we don't approve of cooking medicinal meals at home, such as codonopsis pilosula, ginseng and American ginseng. It's better not to cook them yourself.
Sun: Of course, if people really want to add some medicinal materials to their dishes, it is not completely impossible. You can put some non-toxic, mild and suitable materials such as lotus seed, coix seed, lily, yam, medlar, jujube, Ophiopogon japonicus and so on. And don't eat anything like angelica and astragalus. And when cooking, you must give priority to food and medicine, and don't make a pot full of medicine. Of course, this mainly plays the role of nursed back to health and even psychological comfort, and does not have the therapeutic effect like medicated diet.
Medicinal diet can't be sold in any restaurant.
Moderator: Now many restaurants are under the banner of medicated diet, with "nourishing" as their selling point, attracting many consumers. Then, how scientific are these so-called "medicated diets" and how to regulate such restaurants?
Wang Yi: There are laws to follow in the management of medicated diet. At present, the state stipulates that the relevant units engaged in the production of medicated diet must be approved by the health administrative department before making medicated diet, otherwise they cannot sign the medicated diet. The dietotherapy and Nutrition Department of Guang 'anmen Hospital of Chinese Academy of Traditional Chinese Medicine is the only Chinese medicine hospital with dietotherapy and nutrition department in its kind, and it has not given itself the banner of medicated diet. In addition, the Ministry of Health published 9 1 drugs in document No.9 1998, including onion, ginger, garlic and honey. According to the theory of "homology of medicine and food", medicinal materials other than 9 1 should not be used in food, but should be used according to the provisions of drug symptoms.
Frontier: Some restaurants offer so-called medicinal meals. It should be said that most people in these restaurants don't know medicinal food, and sometimes they don't know what to put when they sell it. I heard that some restaurants sell so-called medicinal hot pot. Chinese medicine is the most taboo spicy greasy, hot pot is full of "oil and water". Think about what medicinal value this pot can have. To put it bluntly, this is to use the public's pursuit of health to achieve the purpose of making money. In my opinion, if a restaurant wants to cook medicated diet, it must be equipped with a regular medicated diet teacher. If the restaurant can't meet this requirement, it shouldn't operate medicated diet.
Zhang: At present, there are too many restaurants under the banner of medicated diet. According to my observation, most of these restaurants are very informal and few are qualified. However, consumers rarely have problems with their diet. The key point is that in order to control the cost, restaurants add few drugs to their dishes, and they are often eaten at one table, and the drugs are scattered. It's okay to eat it, but the effect is definitely out of the question. A regular medicated diet restaurant should be equipped with a regular medicated diet chef, who is very familiar with the collocation and processing of medicinal materials.
Lu Chunjing: You have to go to a regular medicated diet restaurant to eat medicated diet, but the number of regular medicated diet restaurants is too small, because the cost of operating medicated diet is very high. A large part of this cost is labor cost. In addition to regular medicated diet teachers, there should also be professional food guidance to guide customers how to choose the medicated diet that suits them. No one can give him a perfect bowl of tonic soup.
Paying more attention to medicinal diet is not as important as nutrition collocation.
Moderator: After discussion by experts, a concept has become very clear: medicated diet is not only food that can be served on the table, but also has strict requirements on its production, eating method and adaptation to the crowd. However, people urgently need to pursue health through traditional medicine and food. How to solve this problem?
Frontier: In fact, paying attention to nutrition in diet is the most important factor. Not only medicinal food, but also restaurants should be equipped with nutritionists who know how to cook. For example, Japanese chefs only have a qualification certificate of nutrition and hygiene, and the whole training takes eight years to complete, which shows that people attach importance to diet and nutrition. China Cuisine Association is cooperating with the Ministry of Labor to train nutrition caterers. Our idea is to strive to have nutrition caterers in all restaurants above the medium level in the city within five years.
Wang Yi: We should have a scientific concept of conditioning the body through diet, that is, we should not attach too much importance to the concept of medicated diet, but should pay attention to the nutritional collocation of food. Just like many people like to eat a "bumper harvest" because it is a fresh vegetable. As we all know, the harvested cucumber contains an enzyme that destroys vitamin C.
