Preparation of old noodles

5kg warm water at 40℃, 7.5kg new flour, 35g sweet baking powder and 30g yeast powder. Mix the flour, seasonings and warm water and leave it for more than 5 hours to become old noodles.

Preparation of flour dough

1. Ratio: The ratio of water, old flour and new flour is 5:1:8 (normal weather).

2. Preparation points: first add water or warm water, then add the old flour, and finally add the new flour. If the noodles are dry when mixing, add warm water (little by little) and mix a few more times. If the mixed noodles feel sour, add a little warm water and soak 20g of sweet noodles. After the powder is dissolved in water, add it until the dough is no longer sour.

Note:

①The longer the fermentation time of the old noodles is, the less the dosage should be;

②Do not use hot water with a temperature exceeding 40℃ to mix the noodles;

③When mixing dough with a dough mixer, you should first add water and then add flour. Add as much water as possible and then add flour. Do not add water because there is too much flour;

④After mixing, Let the dough sit for 30 minutes before making the cake.

Preparation of meat filling

①The ratio of lean meat is 5:2;

②Cut the prepared meat into small pieces first and put it in the meat grinder Grind into meat filling;

③Add appropriate seasoning and mix with water, then mix with meat. Generally, about 4kg of water can be added to 25kg of meat. Add less at first. If it seems too thick, add more water. This will make the cake faster and save meat.

Preparation of cakes

① First mix the red oil and salad oil with the mashed bean paste, and apply a little oil on your hands before making the cakes.

② Take about 175g of dough and press it into a concave shape, add 10 to 15g of meat and wrap the meat like a bun, shape it into a round bun, and then put it on the countertop

Press evenly on all sides with your hands, trying to make the meat filling evenly distributed in the cake. The pressed cake will look round, even and flat.

③Apply 15-20g of meat filling on the surface, brush a layer of red oil on it, and remove some chopped green onion and sesame seeds on top. In this way, the cake to be baked is completed.

Baking the cakes

Put the prepared cakes on a stainless steel tray. Apply a layer of oil on the tray first. Put 6 cakes on one tray and put it in the oven. Set the oven temperature to about 300°C;

If you use an oven that carries it up and down, adjust the lower oven to 300°C ~ 320°C, and the upper oven to 280°C ~ 300°C, and bake for about 4 minutes. Beginners should pull it out frequently

to check and understand the situation, and bake until the surface turns a little yellow. If you see air bubbles in the middle of the pie, pop it.
