Pectinase is often stored at ~4 degrees Celsius. Why?
The water content of enzyme products is usually 2-8%. Ice crystals are easy to precipitate at degrees Celsius, which leads to the decline of functional activity. When the water activity increases above 4 degrees Celsius, the functional activity is easy to be passivated. ~4℃ has the best functional activity stability. Biological products and reagents are specified to be stored at ~4 degrees Celsius.
