1 Chicken feet with pickled peppers in lemon
Ingredients: raw chicken feet, lemon, coriander, pepper, onion, cucumber, garlic, ginger, sugar, vinegar, soy sauce and oyster sauce.
Exercise:
1. Remove nails from chicken feet, wash and cut into pieces.
2. Boil water in the pot. After boiling, pour the chicken feet into the fire and cook for about 6 minutes (if the chicken feet are cooked for a long time, it will affect the taste, so the water must be boiled before pouring).
3. Take it out and soak it in cold water, so the chicken feet will be crisp and delicious. (Cold water refers to cold boiled water, which needs to be prepared in advance)
4. Prepare the sauce: 1 kg chicken feet slice 1 lemon (it is recommended to use lemon with yellow skin), and add 5-6 peppers if you like spicy food. Appropriate amount of onion, a tablespoon of cucumber oyster sauce, a tablespoon of white vinegar, sugar, soy sauce, a handful of coriander and a little salt, put them in a bowl and increase or decrease according to your own taste.
5. Chop up half a garlic and a slice of ginger, stir-fry them in a hot oil pan, then pour them into a sauce bowl and stir well.
6. Drain the chicken feet, mix the sauce well and put it in the refrigerator for one hour or one night. The longer you soak it, the better it tastes.
2 beer lemon stewed chicken feet
Lemon chicken feet in addition to the above, we also share a new chicken feet method. If you feel good, you can try it together.
Ingredients: chicken feet 500g, two or three slices of lemon, half a bottle of beer (250g), ginger, garlic and coriander.
Seasoning: soy sauce, soy sauce, oyster sauce, salt, chicken essence.
Exercise:
1. Cut chicken feet into small pieces, soak them in clean water 15 ~ 30 minutes, and take them out after dripping blood. Or you can just boil water in the pot and pour it in for a minute or two. )
2. Slice ginger, wash garlic, pat and peel, cut two slices of lemon in half and wash coriander. I usually choose lemon with yellow skin for cooking. Many people say that lemon with green skin will be bitter.
3. Put oil in a hot pot, add garlic and ginger until fragrant, then pour chicken feet and stir fry over high fire. When the color changes slightly, pour in half a bottle of beer and continue to stir fry over high fire. I bought 500 grams, but I poured half a bottle. It's okay to pour more. Stew for a long time and it will be fine.
4. Add a proper amount of soy sauce and soy sauce, stir-fry the lemon slices evenly, cover the pot and stew for 15 minutes.
5. Stew until the juice is almost collected, add oyster sauce, chicken essence, salt and coriander, continue to stir fry on high fire, and collect the juice to eat.
