6. It is said that the best time to add water is when "big bubbles cover small bubbles". I understand this time to be the stage shortly after the small bubbles turn into large bubbles. .
7. There will definitely be a lot of movement when the water goes down, but it will gradually calm down later. If you use an electric kettle, the boiling water will boil before the sugar is fried. Keep it on your left hand side in advance. When the time comes, pour it into the pot without hesitation. If you are afraid of danger, use the pot lid to block it with your right hand. Be brave and careful and don't waste time. Firstly, you will miss the opportunity. Secondly, if you hesitate, letting a small amount of water drip into a large amount of oil will make it more likely to crackle and explode than pouring a large amount of water into a small amount of oil. This step is the most important. It is decisive and quick to pour the water down at once, but it will not cause splashing. The more hesitant, the smaller the water flow will be, and the bigger the splash will be.
8. Pour in all the water, stir slightly, turn on high heat, boil again and then stop the fire immediately. After cooling, put it into a container and save it.
