Peel and wash the lotus root and cut it into thin slices.

Blanch the cut lotus root in boiling water for a minute or two.

Take the blanched lotus root out and put it in cold water.

Don't throw away the water of the lotus root. You can pour it into a bowl and add some sugar to make it delicious.

Take a large bowl of mixed vegetables and pour in the lotus root. Add salt, sugar, vinegar and sesame oil in turn.

Stir evenly and plate.
