The first type: copper coins.

Put four dumpling wrappers into the stuffing respectively, put less stuffing, fold in half and seal. Then seal the four jiaozi outward, press them into a circle, put them in the palm of your hand, and round the edge of jiaozi.

The second kind: sunflower jiaozi.

Place the stuffing in the center of the dumpling skin and cover it with another layer of dumpling skin. Pinch the hem of two dumpling skins thin with your fingers, and then knead them into lace spikes.

The third type: Bo Jiaozi.

Hold the dumpling skin in the palm of your hand, add the stuffing, fold it in half and seal it into a semicircle. Starting from the left, the index finger of the right hand is slightly in front of the thumb, the index finger pushes the dumpling skin forward slightly and folds it, and the front end of the thumb is gently pinched, and this step is repeated until the right side.

The fourth kind: the crown creature.

Fold the dumpling skin into a triangle from the outside to the inside, then turn the skin over, put the stuffing in the middle, and lift the triangle up and knead it into a solid triangle. Rub three sides with your hands, and rub the lace according to the rubbing method of Bojiao above.

The origin of jiaozi:

Jiaozi, formerly known as Wonton, has many names, such as slot, horn, plaque, flat food, prison pill, pink horn, jiaozi bait, dumpling bait, water snack, water jiaozi, dumplings and so on. Jiaozi has various cooking methods, such as boiling, steaming, frying and roasting. Since the Song Dynasty, there has been the custom of eating jiaozi in winter solstice, and since the Ming Dynasty, there has been the custom of eating jiaozi on the first day of the first month.

Judging from the cultural relics, jiaozi originated in China with a history of more than 2,600 years. 1972, some complete jiaozi were unearthed in the Tang tombs of Astana ancient tombs in Turpan, Xinjiang. After a long time, people thought that this was the earliest discovered jiaozi.

During the period of 1978, several jiaozi were found in the bronze hairpin of Xuegu Town in Tengzhou, Shandong Province in the Spring and Autumn Period. 198 1 In May, a pottery figurine was unearthed in an ancient tomb during the Three Kingdoms period in Zhongxian, Chongqing. The pottery figurine shows that ancient chefs are working on the kitchen table, and food is placed on the kitchen table, with a pinched jiaozi and a lace jiaozi in the middle.
