Brine tofu is tofu made from bittern (magnesium chloride). Gypsum tofu is tofu made of gypsum (calcium sulfate).
2. Different colors
Brine tofu is slightly yellow in color and coarse in texture, commonly known as "old tofu"; Gypsum tofu is white in color and tender and smooth in texture, commonly known as "tender tofu".
3. Different characteristics
Bittern tofu tastes soft, hard, with less water content and bean flavor; Gypsum tofu tastes soft and tender, and contains a lot of water, but the bean flavor is insufficient.
4. Different cooking methods
Generally, northerners are used to ordering tofu with brine, which is mainly used for frying, frying, brewing and stuffing. Southerners are used to using gypsum to order tofu, which is mainly used for mixing, stewing, burning and making soup.
