Nanfeng pickles, also known as Nuo vegetables, are pickled and processed by traditional techniques. It is another local characteristic agricultural product with a long history of planting and processing by farmers in Nanfeng.

"Nanfeng Pickle" has a unique color, fragrance and taste. It is fresher than kimchi, more brittle than kimchi, sweet in acid and attractive in aroma. It has the effects of promoting fluid production to quench thirst, stimulating appetite, helping digestion and stimulating food customs. At the first Jiangxi Food Festival in 2000, the dishes made with it won the Excellence Award. CPPCC members from Hong Kong and Macao visited Nanfeng and were particularly interested in a sauerkraut. They will never get tired of eating it.

Nanfeng pickle has been cultivated in Nanfeng county for nearly a hundred years. Orange farmers in Guoyuan Qin Cheng Town, Qiaobei Village, Yaopu Village, Shuinan Village and Laixi Township all have the habit of interplanting kimchi in orange orchards, and have accumulated rich experience in production technology and formed a set of kimchi technology. Every household in these villages can pickle their own pickles, and many farmers specialize in producing and processing pickles. Each of them has a set of soil equipment (mainly kimchi jars or pools, bamboo covers), forming a family workshop for kimchi processing with great production capacity. The total output of kimchi in these family workshops exceeds 654.38+10,000 Jin. Up to now, Nanfeng pickles in the county vegetable market still come from these family workshops, which are available every day and never stop.

From 65438 to 0997, Qiaobei Township of Nanfeng County cooperated with Food College of Nanchang University, introduced advanced production technology and equipment on the basis of traditional processing technology, and built Jiangfeng Vegetable Processing Factory with an annual processing capacity of 500 tons. Since then, the pickling, packaging and preservation processing technology of Nanfeng pickles has been significantly improved, forming a whole set of industrial processing and production technology of Nanfeng pickles (traditional pickling → different formula ingredients → vacuum packaging → sterilization → finished products). In this way, the quality of Nanfeng pickles has been further improved, and the shelf life of Nanfeng pickles has been greatly extended (from February to March in the past to more than half a year).

In recent years, with the strong support of the relevant departments of the county government, the industrialization of Nanfeng pickles has made breakthrough progress. At present, there are two leading enterprises in Nanfeng pickle industrialization, namely Jiangfeng Vegetable Processing Factory and Heyuan Vegetable Processing Factory. Nanfeng pickle fresh vegetable production base has been established for more than 3,000 mu, driving more than 2,000 farmers in the base. Enterprises and family workshops cooperate to process and produce more than 500 tons of Nanfeng pickles every year. Products are exported to Beijing, Shanghai, Nanchang and other large and medium-sized cities, and are well received by consumers.

Nanfeng soft-shelled turtle, also known as foot fish, has been an industry for farmers to get rich in this county for nearly 10 years, and it has been widely cultivated in county towns and suburban towns. The dishes cooked by soft-shelled turtle are rich in nutrition and are high-grade tonics.

1992, the county's total stocking amount was nearly 2,000. In 1995, the breeding range radiated to all towns and villages in the county, with 34 farmers10, and the water surface 1705 mu, with a stocking amount of 264,000 Jin. 1996 has developed rapidly, with 5,600 farmers and nearly 3,000 mu of water surface, and the stocking amount exceeds 1 10,000 kg; At this time, the comprehensive culture of soft-shelled turtle also started, with 0/8 hatcheries/kloc, mainly distributed in Qin Cheng, Shishan, Taihe and other towns. Since 1997, the turtle market has been depressed. By 1999, farmers' tax revenue had been reduced to 4,700 households, and the water surface was only 2,700 mu. The stocking rate fell below 1 10,000 Jin, and the annual egg production was152 million. In 2000, there was a slight rebound, with more than 5,000 farmers and 200 water areas. The annual egg production is 6,543,800+0,800, and the hatching turtle eggs are 5 million. In 2006.5438+0, turtle breeding began to rally, and the number of large-scale breeding households increased sharply. Although the actual number of farmers has decreased slightly, the actual aquaculture water surface has increased to 3,800 mu (including 8,654.38+0.6 kg of commercial turtles), laying 22 million eggs and 8 million hatching turtle eggs every year. The breeding area has been reduced to more than 3,400 mu, the annual egg production is 6,543,800+0,968, and the commercial turtle is only 800,000 Jin, with an annual output value of 50 million yuan. In 2003, the breeding area remained at 3,400 mu, with an annual egg production of 20 million pieces and a commercial turtle of 6,543.8+0,000 Jin, with an annual output value of 60 million yuan.

Nanfeng Clay Furnace In the 13th year of Guangxu reign (1887), Nanfeng County began to produce clay stoves, including wood stoves and charcoal stoves, which were once collectively called salt stoves, and 1953 was renamed Nanfeng Clay Furnace. The raw material is clayey soil, and the production processes include mud refining, pressing, peeling, polishing, bottoming, chassis, packaging and so on. Because of its beautiful style, milky white, strong endurance, high temperature resistance and durability, its products sell well both inside and outside the province and enjoy a good reputation. It has been a specialty of Nanfeng for more than 100 years. Especially after the 1970s, the mud furnace was operated mechanically, and the wall of the furnace was decorated with flower and bird patterns, creating an octagonal small cover furnace for burning charcoal (small and exquisite, exquisite and durable, well covered after use, and the charcoal was self-extinguished). In addition, other processes have also been improved to some extent, and the production of mud furnace has developed rapidly. Since 1979, it has won the quality product certificate issued by the provincial people's government for three times. Although high-tech burning appliances (such as gas stoves, induction cookers, etc. ) is rapidly popularized, and the dishes made by Nanfeng earth stoves are particularly delicious and mellow, and its special role is irreplaceable on holidays or when guests come to the door.

Bean curd skin is one of the three traditional specialties in Nanfeng, which is as famous as tangerine and mud stove. Developed by Jiang Zhiliang, a vendor in the Ming Dynasty, it has a history of more than 600 years and is also a famous local product in and outside the province. According to Li Shizhen's Compendium of Materia Medica, "The method of tofu ... soaking in water, grinding, deslagging, cooking and collecting". In the past, the production and processing of tofu skin were all carried out in family workshops. The tofu machine uncovers the solidified tofu skin while it is hot and dries it. Its output is very small, and there are dozens of family workshops processing tofu skin in towns and villages of Nanfeng County.

Bean curd skin is convenient to eat, rich in nutrition, contains plant protein and unsaturated fatty acids, and is a health care product for the elderly, pregnant women and patients with heart disease and hypertension. It can be made into soup and processed into various famous dishes when eaten. It is a good dish in people's daily life for holidays, weddings, funerals and vegetarian temple fairs. With the continuous improvement of people's living standards, the demand for tofu skin is increasing, and the traditional manual processing of tofu skin can no longer meet the needs of people's lives, so that Qintai Food Joint Factory, a processing enterprise that uses modern advanced technology to produce tofu skin, came into being.

The factory intensified product development, innovated technology, improved packaging, and classified according to quality, forming three series of fine packaging, simple packaging and ordinary bean curd skin, which effectively overcame the defects of easy mildew, storage resistance and short shelf life of bean curd skin in the past. The production process includes rinsing, grinding, cooking, filtering, processing, sterilization and vacuum packaging. This product has the characteristics of soybean essence, low glycoprotein, rich nutrition, golden color, thin as cicada wings, fresh and delicious, light packaging, small size, easy to carry and transport, and its sales are increasingly promising. At present, they are mainly sold to Nanchang, Guangdong, Shanghai, Chongqing, Beijing and other places. In 2003, the factory participated in the agricultural products fair held by the Ministry of Agriculture in Beijing. At the meeting, an American businessman was optimistic about China Nanfeng tofu skin and held talks with the factory, demanding that the factory provide 50 tons of tofu skin for export every month. Due to the limited capacity of the factory, no agreement was reached at that time.
