Methods
Clean fresh oysters from surface mud and sand, and use the back of a thick knife to carefully cut open the oyster shells from the front end, remove half of the shells that do not have any oyster meat, and rinse the other half of the shells with oyster meat with clean water, and drain the water.
Wash and chop the bell pepper and scallions, then mix in the salt, garlic and lemon juice to make a sauce.
Put the oysters in their shells directly on the grill and cook them, so that the juices will gradually seep out as the temperature changes.
When the oysters are dry, pour the sauce over them and continue grilling for about 2 minutes.

Tips
The charcoal grilled oysters are perfect for barbecuing in the field, or if you are making them at home you can grill them directly on a gas stove with a good grill, or make them in the oven (temperature 160 degrees, time 5 minutes).
Oysters are most flavorful when eaten raw, but after all, they can be a bit risky to eat directly, so it's recommended to cook them before eating them.
