Materials: spare ribs; barley; wine; salt; sugar;
Practice
1. barley rinsed and soaked for about 1 hour;
2. spare ribs with water to boil and then boil a little for a few minutes. (The blood foam are cooked out); rinse with warm water, add warm water and ginger to boil. (Using warm water to wash and cook the ribs can prevent the ribs from turning into firewood)
3. Add the wine and turn down the heat to simmer for about 1 hour. (Just a few small spoonfuls of wine can be, more added will steal the fresh flavor of the ribs); add soaked barley and salt and then stewed for about half an hour, until the barley is soft and rotten. (Job's tears are difficult to cook, you can soak and then cook, or put in the soup earlier to cook together); out of the pot before you can mix in some sugar to refresh.
