Cooking tips
1, garlic seedlings are particularly difficult to cook, so be sure to blanch them with hot water. When scalding, you can put a proper amount of oil to ensure the color of garlic seedlings. The blanching time should not be too long, the cooking is too soft, and the garlic seedlings have no umami flavor.
2. If you finally find that the garlic seedlings are still raw, you can stir fry while putting cooking wine. You can also add a little broth or water to simmer, but you can't add more water. The less simmer, the better. Just pinch off the garlic sprouts.
3. If you are worried about too much nitrite in the sausage, you can steam it first, pour out the steamed water, and fry it again, which will remove a lot of nitrite!
