Ingredients: 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 tbsp rock sugar or maltose, pinch of five-spice powder, 1/4 tsp pepper, 3 and 1/2 cups water, 1 tbsp wine, 12 cloves of garlic.
How to make it: Heat 2 tbsp oil in a wok and fry the garlic until golden brown, then remove. Add the other ingredients to a separate pot and bring to a boil. Add the garlic and simmer until thickened. Wash and drain the meat, and marinate it in soy sauce and sugar for 1~2 hours.
Japanese Teriyaki Sauce
Ingredients: 1/2 tbsp soy sauce, 1 tbsp oyster sauce, 1.5 tbsp sugar, 1/3 tbsp sesame oil, 1 tbsp each of cornstarch and water, 1.5 cups water, pepper and salt.
How to make: Boil 1.5 cups of water, add all ingredients and thicken with cornstarch water until thick.
Shacha Sauce
Ingredients: 3 tbsp each of shacha sauce, black pepper sauce, honey, 1 tbsp each of oyster sauce and wasabi sauce.
Method: Stir well (can be thickened with water or cooking wine). Great BBQ sauce for seafood, skewers, and meats.
Mid-Autumn Barbecue Sauce
Ingredients: 4 tbsp ketchup, 2 tbsp seafood sauce, 1 tbsp French mustard, 1 tsp vinegar, 1 tsp olive oil, 1 tsp cayenne pepper, diced onion, minced garlic, 1/2 tsp salt, 1/2 tsp sugar.
Method: Whisk well.
Wabi Sauce
Ingredients: 2 tbsp soy sauce, 1 tbsp each cooking wine and ketchup, ginger, onion puree, lemon juice.
Method: Mix well. Suitable for fruits and vegetables, meat.
