1. Remove scales, guts and gills from the fish and rinse well.
2. Coat the fish with a layer of cornstarch.
3. Prepare green onion, ginger and garlic, sesame leaves, star anise and chili pepper.
4. Pour oil in a hot pan, when the oil temperature is 70% hot, put the fish into the pan and fry both sides until golden brown.
5. Add green onion, ginger and garlic, chili, star anise and sesame leaves and pop the aroma.
6. Add dark soy sauce, soy sauce, vinegar and white wine. It is important to note here that adding white wine not only removes fishy odor very well, but also makes the fish taste more tender.
7. Cover and smother for one minute, this process allows the fish to fully absorb the flavor of the sauce and spices.
8. Put in the appropriate amount of water, put salt, sugar.
9. Turn the heat to low and simmer for 20 minutes.
10. Reduce the juice over high heat until thickened.
11. Out of the pot on a plate to enjoy the food.
