Oven Banana Cake

Oven Banana Cake Steps
1. Preheat the oven to 200℃ (400℉).
2. Break 2 bananas into pieces.
3. Press into mashed banana.
4. Add 1 egg, 30 ml oil and 30 ml milk. Oil can be vegetable oil, melted butter or coconut oil. For milk you can use cow's milk or almond milk.
5. Mix the liquid ingredients well.
6. In another larger bowl, sift 1 cup (120 grams) of flour, and ? teaspoon (2.5 ml) of baking soda. The flour can be white, whole wheat, or half and half. Low or medium gluten flour is fine.
7. Mix the flour and baking soda well.
8. Dig a hole in the center of the flour and pour in the liquid ingredients all at once.
9. Stir in one direction.
10. Stir until the flour and liquid are just combined. If it's too thick, add a little milk. You can also add chocolate beans, nuts, dried fruit, peanut butter, etc. Don't over mix or take too long!
11. Brush molds with oil. Pour the cake batter in, 3/4 full is good. Pour water in the extra empty mold.
12. Bake in the upper middle of the oven at 200°C (400°F) for 6 minutes, then lower to 180°C (350°F) for another 12 minutes. (Do not remove the cake from the oven in the middle)
13. Insert a toothpick into one of the cakes, remove it and if the surface of the toothpick comes out clean, then the cake is done baking.
14.After a few minutes, remove the cakes from the molds and let them cool on a rack.
15.Fresh from the oven, the banana cake is hot, fragrant and very tasty!
16. Just wrap the cooled cake in a napkin and heat it up in the microwave for half a minute! It's as delicious as if it just came out of the oven! Eat with peanut butter and milk for more nutrition!
Tips
The cake is sweeter when made with ripe bananas! If you think it's not sweet enough, you can add some honey or sugar.
Stop mixing as soon as the flour and liquid are just combined. If there are no large flour lumps in the cake batter, it's done. It's okay if there are still small lumps of flour that you haven't stirred in. This is because overmixing will create too much gluten and the cake will have honeycomb holes inside.
It's best not to use expired baking soda. Opened baking soda has a shelf life of one month.
Muffins will rise higher and more beautifully if you bake them on the upper middle shelf of the oven and divide them into two temperatures, 200°C and 180°C.
Refrigerate for about three days. To eat, wrap in a napkin and microwave for half a minute.
