The reason why Chaoshan beef balls are sour is that they are paired with the sour soup of Miao Village
"Sour" Chaoshan Beef Hot Pot
The sour soup of Miao Village in Guizhou, What kind of spark will it create when paired with Chaoshan beef?
It’s still a familiar scene, but it’s not the same recipe. The secret lies in the change of soup.
This restaurant changed the soup into sour soup. Sour soup is a "distant visitor", coming from the ancient Miao village in the mountains of Guizhou, 800 kilometers away. It uses mountain spring water and self-grown fragrant glutinous rice as the main ingredients, with auxiliary ingredients such as wild tomatoes or vegetables, and heated rice soup. Formed by natural fermentation.
Sour soup is divided into white acid and red acid. White acid is made by adding leafy vegetables to rice soup or rice washing water and storing it in a bucket, bamboo tube, porcelain jar or altar next to the fire pit. When cooking every day, put the rice soup or rice washing water into it, and then it will naturally ferment. Red acid is mainly prepared from mountain tomatoes and red peppers, along with various ingredients such as Sichuan peppercorns, ginger seeds, mint leaves, etc., and is served in earthen jars for later use.
