When the water in the pot is reduced by half, turn off the fire, take out the pigskin inside, scrape off the grease on the pigskin surface with a knife, then cut the pigskin into strips, drain the water, put it into a bowl, add a proper amount of warm water, then add baking soda, stir evenly, knead repeatedly by hand to clean the grease left on the pigskin surface, and then rinse the pigskin strips repeatedly with clear water.
4. Add enough warm water to the pot, put the pigskin into the bag, boil it over high fire and then simmer for one hour. When the amount of water is only 1/3 of the original amount, turn off the fire, simmer for 20 minutes with the remaining temperature, then pour the pigskin into the mold for cooling, and then put it in the refrigerator for cold storage and molding, so that the pigskin jelly is ready.
