Durian has not been opened after being stored for a period of time. It may be that durian is picked before it is ripe, so it is difficult to cook it. Bananas release a gas called ethylene when they are ripe. As bananas become more mature, they will release more ethylene. Mature bananas and immature durian can be put in a box and sealed with tape, and durian will gradually mature.
